Routine Sunday

Every Sunday we try to clean the house and hit the grocery store to shop for the coming week. I’ve been getting better about cooking and it saves us so much money.

Today, I was too lazy to clean buuuuut I did meal prep for little miss Tove. (also means I’ll be mopping the floors once Tove goes to bed tomorrow)

I cooked some eggs for Tove with spinach, onion, and cherry tomatoes. I also boiled some broccoli and carrots for her. Then I used the leftover broccoli, spinach, and tomatoes in the blender with some Greek yogurt and put it into portions for the fridge/freezer.

💥 and just like that we’re ready for this next week.

Syrup.

Ben’s off work today, which isn’t the usual so we decided to go out for brunch. We packed up little lady and drove down to Main St. in Norman. I let Ben decide between Neighborhood Jam and Syrup and he chose the latter!

Tove enjoyed her banana stick while mom and dad got to eat. I ordered the home sweet homa with crunchy French toast 🤤.

If you’re into sweets, Syrup is definitely the brunch you’re looking for they have so many different waffle, pancake, and French toast options. Plus their coffee menu is LEGIT as well.

Lunch Win

They say pregnancy changes your brain chemistry but does it alter your ability to cook as well? Cause I’ve never been able to make an omelette in my life before and today.. voila!

I set out to make a quick scramble during my lunch break but the base started well enough I figured I would give it a go at making an omelette. Worst case scenario is a scramble anyways!

Somehow it worked. End result being a very yummy thyme & gruyere omelette.

Frida Southwest

Last month Ito came to visit OKC and see the house for the first time. I dragged him out to brunch with OKC’s finest!

Michael, Julianne, Ito, me, Sabah & Tove all met at Frida Southwest in the Paseo Arts District and let me tell you about their brunch…

Their mimosas were crisp and to my liking. They also had some fun other options on their brunch libations menu. Julianne and Michael were less basic than Ito and I 😋.

We started with some burrata/prosciutto with sourdough bread. Their house made biscuits were also delish.

I stuck with a simple caprese salad and their presentations just blew me away. I will say I could’ve done with a bit less oil but it was a nice touch to soften up the fried cheese.

Michael is ultimate daddy. that’s all.

To finish up we ordered a giant cinnamon bun for the table. I mean giant! Sabah’s hand for scale ^^

I’ve been waiting and wanting to try Frida Southwest for a while now and wow I should’ve gone sooner. Honestly one of the top 2 meals I’ve had in OKC.

Eight Months

What a difference Tove has already made in this world. So loved from many areas of the 🌎 globe.

We’ve been blessed to have her as healthy and happy as she’s been these first 8 months.

This last month, Tove’s appetite has definitely grown. She’s still breastfeeding 3 times a day but we’ve also added in 2 meals and some snacks throughout the day. So far anything puréed has been a hit, but she’s also been enjoying some baby led weaning. We’ve started with some watermelon, tortillas, avocado.. you name it, Tove eats it!

She’s still stationary but honestly, I’m grateful for any extra time we get. I am not ready to be chasing her throughout the house just yet.

Tove LOVES dogs, like a lot. She screams with happiness at both my parents dog, Ziggy and anytime she can get Tex’s attention at home. She’s also fond of other dogs on our walks 🐾

We’ve recently hit a fussy phase, or leap if you’re reading the wonder weeks. Lots of patience is needed from us as parents and it’s a work in progress. Luckily she’s still sleeping well throughout the night in her crib so we’re able to be sane throughout her tantrums.

I can’t believe we’re just a few months out from her first birthday… like I said, life changing.

Truck Yard

Visited Dallas a few weekends ago. We left Tex at boarding and drove down on Saturday for a quick visit.

For Sunday brunch we decided on a less conventional option- truck yard! we went to the one in The Colony.

I ordered a sparkling rose which wasn’t bad, the rest of the gang drank Mexican beers.

We shared some food from the food trucks. Fries, chicken fried rice, and some fried pickles.

Tove tried to stay awake as best as she could but went down for a nap mid-lunch.

Was a nice quick outing with my parents, Ben and Tove 🥰 before I went to Megan’s bridal shower.

The Winston

We decided to go out for dinner last night since the weather was so nice and it’s the last weekend before I start my new job.

We went to the Winston in Norman and sat on their patio. It was lovely 🥰

Ben and I enjoyed their garlic cheese flatbread so much we ordered it twice. The grilled cheese and tomato soup was also LEGIT. I would skip the tuna main though, it was too salty for my taste.

First Christmas

Meant to post this on December 31st… time flies when you’re getting settled into new routines.

The week of Christmas we moved into our house here in Oklahoma. My dad took time off work to come help move all the furniture, then help unpack everything and clean leading up to Christmas.

Traditionally we celebrate Christmas on the afternoon/evening of the 24th but due to the move my mother arrived that afternoon and we met my brother and his girlfriend Helena out for dinner. Then on the 25th, like most Americans, we celebrated Christmas with our traditional family meal. Felt a bit different but I was so happy my family made the trip up to celebrate with us.

The first Christmas of many more to come for Tove. It’s going to be so much fun 🎄🤶🏼

3 + 4

Today Tove is 4 months old.

I didn’t write a blog post for her third month, mostly because it felt like chore on my never ending to-do list but also because 143 is a special number to ben and I. It means I love you; there is 1 letter in I, 4 in love, and 3 in you.. 143. A lot of the time I will message Ben 143 instead of writing it out and it’s been this way for as long as I can remember. Ben’s favorite number and his football number was always 4, my number is 3. On top of that.. Tove was born at 4:31 in the morning. So it kind of made sense in my mind to group these two months and blog posts into one.

Tove is still as happy as can be.. until she’s not. She’s finding her voice so lots of random shrieks coming from her these last two months. We’ve had a few tough car rides where she wouldn’t stop screaming. She’s growing to be tall like her Pappa, she’s ~2 feet tall now and we’re convinced she weighs more than 15 pounds. She’s still in size 1 diapers but she’s outgrown all of her newborn and the majority of her size 0-3 month clothing.

We’re still nursing and luckily after 2 weeks of oral exercises Tove’s latch has improved and she’s all healed. She’s definitely teething and putting all the things in her mouth. Tove has also started to hold things with her cute little hands as well. I have conversations with her daily and she’s so close to saying “hej!”

Ben and I live for her giggles and I never want her snuggles to end. We are so in love and my only goal in life is to keep her as happy as she’s been for as long as possible 💓
