Scissortail Park South

I randomly read on Reddit that Scissortail South had opened last week so Ben and I decided to pack up the little babe and check it out.

MAPS has done such AWESOME things for Oklahoma City, it’s kind of unreal.

I was very impressed with how clean the bathrooms were and the amenities surrounding the trails and practice pitch.

Ben, being a football ⚽️ fanatic, was elated when we found the practice field to park by. Luckily we had packed Tove’s mini ball with us… what are the odds.

Tove and I got to enjoy a nature walk with this beautiful scenery.

We thought about walking across the Skybridge to the north side of the park, but fall hasn’t quite arrived yet.

So we opted for air conditioning and drove over to *you guessed it* social capital.

I’m On A Boat

For Labor Day weekend we drove down to Texas to then drive north again to lake Texoma.. only to end up on the water in Oklahoma.

It was Tove’s first time on my parent’s boat, Red Wine & Bourbon.

Tove did so well and enjoyed swimming in the water as well. She’s a water lover for sure.

Have a feeling this little lady is going to be calling Mormor and Morfar in the future begging to go to the lake!

11 months

… + a few days. I didn’t have the energy or time to write this post last weekend but better late than never.

Tove is 1 month shy of being a year old- holy crap. Time really does go by fast when you’re constantly watching your child grow before your eyes.

Tove loves to walk around with the help of mamma and pappa, she couch surfs from one side to the other constantly.

I still don’t think there is a single food we’ve tried that Tove doesn’t enjoy eating.

She’s sleeping through the nights still and I swear she’s bigger when we pick her up in the mornings some times.

She’s learned to clap and enjoys her favorite Swedish YouTube videos along with playing with all of her toys.

We even took a dip in the kiddie pool together outside over mamma’s 3-day weekend.

Just enjoying having a happy healthy baby ☺️

Mini Me

I’ve been trying to teach Tove how to wear sunglasses and yesterday I finally got her to wear them for slightly longer than 15 seconds.

Tove wore her sunglasses just long enough for Ben to snap a pic of us! She threw them on the ground the second we started walking though🤪

… just kidding. But for real, I am grateful. I have been on a rollercoaster of emotions these last two weeks with my new role at work and today it’s finally starting to click.

Not that I know what I’m doing, but it’s clicked that I am grateful to have this job! I am grateful to get to work from home. I am grateful to be employed.

We went on a family walk with Tex this morning and it really just helped set my mind right. It’s not “ugggggh woooork is hard” anymore, in fact I’m happy to have a job.

That being said, TGIF 😝

Oklahoma State Capitol Abortion Ban Protest

Today, for my first Mother’s Day with Tove being outside of my womb, we went to an abortion ban protest at the state capitol.

I can’t look into Tove’s eyes and tell her that she doesn’t have the same rights as a boy and that she doesn’t matter, because she does.

There were about 50-60 people at the protest. It was heartwarming hearing the cars honk on the underpass as we cheered them on with our signs.

I loved what one woman had wrote, “a quality man does not fear equality.”

I’m so proud for Tove to have a father that understands she should have bodily autonomy, and that it’s her right as a woman to make whatever medical decisions are necessary to her.

It’s terrifying thinking about how women might be punished under these new laws and it’s so unjust I couldn’t just be a keyboard warrior anymore.

9 Months

This post is a day late but Tove was extra fussy and stayed up an hour past her bedtime last night. I’m pretty sure I start every monthly post off the same way, “man it’s a wild ride..” but for real watching a little human who grew inside of you find her way in the world is the biggest trip.

Tove is able to sit on her own but cannot sit up from lying down yet. She’s begun army crawling around and to whichever nearby object she can find. She enjoys crawling to Tex and stealing his 🧸 toys- and he’s sweet enough to let her.

We’re in the shrieking phase- I do not love it, nor does Ben. Tove is finding her voice but currently it involves screaming at the top of her lungs at almost everything. It’s an ear piercing shrill sound but it’s not because she’s upset. Cute and funny when it’s at lower registers but when she gets you in the ear it’s definitely less cute.

Tove has started mumbling and babbling so the race is on to see what her first words will be. Tex, pappa, or hat are my guesses 🤪

Food wise, Tove is always hungry it seems! She loves purées and has been enjoying cut up fruit recently. Much like mom, Tove also enjoys bread and pasta!

She outgrew her first sleep sack and she’s pretty close to being done with her 9 month old pjs as well. Tove’s got them long legs like her pappa.

Prosciutto Egg Drops

Santana made these when we watched the Formula 1 race at their house a few weeks back and Ben got the recipe from her since we both enjoyed them so much.

They’re super easy to make and so far everyone I know who’s tried them can’t get enough.

We had leftover thyme from when we had Sierra and her family over for a BBQ so I decided to make a quick lunch/snack for Ben and I on Sunday.

You’ll need:

  • Olive oil to grease the pan
  • Muffin pan to cook in
  • Prosciutto (12 slices or ~6oz.)
  • Eggs (12 count)
  • Gruyère cheese (1 cup grated)
  • Heavy whipping cream (1/4 cup)
  • 1 teaspoon chopped thyme
  • Salt & pepper to taste

Preheat oven to 365(F) degrees. Then start by lining the muffin pan with olive oil. For this batch I used half the amount of prosciutto (not as recommended because they don’t keep their shape as well nor have the eye appeal) to line the pan like a cupcake wrapper.

Then grab a tablespoon heaped with Gruyère cheese and drop into each cup. Crack an egg into each (without breaking the yolk) and then drizzle with roughly a tablespoon of heavy whipping cream. Top each cup with a sprinkle of thyme as well as salt and pepper.

Pop them into the oven for ~15 min or until set (adjust time depending on how you want the yolk cooked). Then take them out and let them cool. I haven’t had an issue letting them cool in the muffin pan but I’m sure a wire rack is optimal.
